They purchased a piece of land in Anxi - Da Tian area.   The land had bushes planted on it by the previous owner of the famous Tie Guan Yin varietal called “Hong Xin Wai Wei Tao”.\u003cspan\u003e \u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eSince then, they’ve kept the garden free of agrochemicals, growing naturally and processing their tea in a more traditional manner than the super green Tie Guan Yin in the market -\u003cspan class=\"Apple-converted-space\"\u003e \u003cspan\u003e \u003c\/span\u003e\u003c\/span\u003ewith more withering, encouraging some oxidation, stronger rolling and charcoal roasting.\u003cspan\u003e \u003c\/span\u003e\u003cspan class=\"Apple-converted-space\"\u003e \u003cspan\u003e \u003c\/span\u003e\u003c\/span\u003eThis encourages a more subdued aroma, but greater elegance, depth and character than the immediate hit of aroma from the greener teas.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003e\u003cmeta charset=\"utf-8\"\u003eOn a scale from 0 being nuclear green TGY to 10 being deathroast, we'd put this level of roast somewhere around 5.   \u003c\/p\u003e\n\u003cp class=\"p1\"\u003eWe've packed this in ~5g bags.
