We decided to try a new production process this year with a portion of our Beyond the Clouds Red tea. We've been making a sun-dried version for many years now and have been experimenting with finishing the tea off with a light roast.
I think this year we've got the balance right, slightly sun drying and then roasting the tea - it lifts up the tea and brings out the aromas and higher flavours.
